August 16 is National Rum Day!
In honour of this we’ve created an amazing barrel age rum recipe for you try out.
But first, we want to know what your favourite rum cocktail is.
Now onto the recipe. This recipe is based on a 2L oak aging barrel.
Recipe: Barrel Aged 7 Year Itch
Ingredients:
44 oz Bacardi Black (Infused with a tsp and a half of Chinese five spice for 12 hrs, then strain through a coffee filter and back in the bottle)
12 oz of Sweet Vermouth
12 oz of Aperol
Directions:
Age the above ingredients in a barrel for a month.
To make a drink strain 3 oz into a mixing glass with ice and stir.
Strain into the rocks glass and serve with a large ice cube.
Garnish with a flamed orange peel.
This is a phase cocktail. It’s two cocktails in one, all you need to do is add Fever Tree ginger beer to mix things up and now you have a world class Dark & Stormy.

How do I make/find Chinese 5 spice
Hi Darryl, most grocery stores carry it.
You can pick up the spice at bulk Barn but I find that to be very cinnamon heavy.
you want to add an Asian accent to a dish, there are three ingredients, any one of which will do the job: Hoisin sauce, sesame oil, andfive spice powder. Five Spice Powder is a blend of cinnamon, cloves, fennel, star anise, and Szechwan peppercorns. Some recipes also contain ginger, nutmeg, and licorice.
