Best thing I ever did! I asked Jeff to take a simple bottle of 40 Creek and see what magic he could make with it…wow!

What he did to it will remain a mystery as no magician ever reveals his secrets. This simple Canadian Whisky now had complex, sophisticated elements to it.

All he said was, “The barrel, patience and time”…Whatever that means?

First there was the addition of smoke followed by a taste of maple…it reminded me of sugar maple…a balanced sweetness. The usual burn became a gentle warmth. It was a whiskey that stood up to the test of my fireplace and the blues…and yet was not out of place pairing with coffee after an elegant meal.

Definitely I will be going back for more…and buying my own barrels! Going to experiment on my own I think. Check it out…you will not be disappointed. Of that I promise you.

I cured my barrel according to the instructions provided (easy) and started with an inexpensive rye whiskey for my first aging, after only 3 weeks it already has more of a cask/barrel flavour like the more expensive brands, not harsh or bitter but a spicy, toasty caramelized flavour with a smokey aroma, very pleasant. . . can’t wait for the next 3 weeks of aging! I have a 3 litre barrel that I have had filled for about 3 months. OMG, The bourbon that came out is freakin next level. Many have said better then Bulliet. I am aging my second batch in the barrel now. I will be buying more this year.
